Boxing Day breakfast for me has been a rather satisfying opportunity to make a start on the process of not wasting Christmas food.
I fried off some finely sliced brussels sprouts in butter, from those we didn’t cook yesterday, and seasoned them with salt and pepper. To this I added a good dollop of the leftover bread sauce (itself a “use me up” conconction) and some whipped egg that had been used to brush the top of sausage rolls and other pastry based snacks.
The resulting breakfast ‘cake’ was actually rather delicious. Not only did I manage to clear a bit more space in the fridge but I have discovered something I might seek to repeat in future (in which case, this blog entry will be invaluable).
