I found another use for tree spinach (Chenopodium giganteum) stalks yesterday. Last month I discovered that the flexible portion of the stalks can be used like asparagus. We have a glut of the crop at the moment so I took a handful of stalks and threw them in with the meal I was roasting, which transformed them into crackly sticks that could be used to dress the rest of the meal. I imagine you could do a similar thing with asparagus but I have never wanted to waste it; with tree spinach, I have so much at the moment that any ideas of how to use it are a boon because they bring us a bit closer to clearing a view to the rest of the garden!
