Over the weekend, I made an orange polenta cake following this recipe. I say following but I have to confess that I am using that term in (or beyond) its broadest sense. Not least, I didn’t have any oranges, so my citrus components used a mixture of lemons and limes which were on hand instead.
I think I followed the rest fairly carefully though and, with the caveat that I’ve only made it the once so far, it seems a pretty good recipe. The result was firm but not stodgy. It was also moist and not overly sweet (nor too sour). One to try again, which will probably be like this but different again.
