It probably tells you a lot about the kind of things I like to eat that ‘meaty’ is one of the words that come to mind when I think about what mushrooms bring to the table! However they do add texture and protein to a dish and can either be a star ingredient or blend in and bring things together.
It was the latter role I had them in tonight with what was essentially a bolognese sauce but replacing mincemeat with mushrooms chopped up in a food processor. Side by side, a meat based dish might win out for my palate but this one is still rich and tasty and takes care of several meals to come as well as food for this evening.
