One of the items in last week’s veg box (from Oxford-based Veg in Clover). I like a straightforward cauliflower cheese but, as Jane is keeping her cheese consumption down at the moment, wanted to find something else. Seeking inspiration, I turned to Niki Segnit’s Flavour Theasaurus which picks cauliflower as an element in all sorts of pairings.
My choice was to match it up with saffron. I took a plain risotto and included both the cauliflower (broken into small florets and blanched) and some saffron. This is quite simple and easy and yielded a tasty dish which, although not the greatest flavour sensation I have ever created, made good use of the cauliflower in a new and surprisingly exotic garb.
