As well as bottling my Shortest Day beer yesterday, I also finished off my Quince cider. This was the batch with a proportion of juice from Chaenomeles japonica (flower quince) as well as from apples. It fermented just like regular apple cider, dropping from 1.048 to 0.994 or an ABV of about 7.1%. There was a bit left over which I sampled; it is similar to the other ciders but I think I can detect a note of the quince in there too.
We’ll see how it mellows out after a few weeks in the bottle but it looks likely to be a successful experiment.
