I think my Autumn Ruby brew was basically ready by Monday morning but it was today I managed to get it bottled. I only got eight bottles (so about 4l) but I hope I’ve managed to avoid most of the sediment. I think bottling is definitely the part of my process that I next need to refine as it is quite slow and messy and I’m sure I could do it better. Maybe a conical fermenter?
Anyway, the vital stats were a final gravity of 1.010 and thus an ABV of about 6.3% – a strong beer that will be ready for Christmas. If I get another brew on soon, I should be able to get a second, lighter batch of something to support it.
