I think my Jerusalem artichokes are probably in a pot that is too small for them – when I get in after work on a hot day, they are often visibly wilting. That said, it is remarkable how turgidity is restored after I’ve given them a drink of water. They are remarkable plants and seem to survive this indignity fairly well but maybe I’ll try to find a bigger vessel next year.
Why don’t I just plant them in the ground? It would be harder to harvest and I’ve got a feeling they would make themselves very comfortable, spreading out of control.
