I mentioned that I had been doing lots of preserving at the start of September. This week I have opened one of the jars of pear jam I made. It was tasty at the time but has got even better with time. It has a deep orange colour and a rich, complex flavour that is much more than merely sweet. Definitely one I will want to make again next year.
