Caesar Salad

I made my first caesar salad today. Jane’s sister was round for lunch and had been telling us about one she had recently enjoyed at a restaurant, so I did some research. It turns out to be a simple base of shredded lettuce (I added some cherry tomatoes that needed using up) along with croutons (I lightly fried some cubes of bread) and a dressing. My dressing was a combination of salad cream (I didn’t have mayonnaise in the cupboard), oil, vinegar, dried tarragon and a touch of anchovy paste. To finish it, we had slices of chicken breast, seasoned and fried with finely sliced garlic.
