Although I’ve done a lot of brewing before, I think the the cider I started yesterday is the first one I’ve done in a demijohn with a bubbler valve attached. It was fascinating to come downstairs this morning and see not only visible signs of fermentation but also bubbles (escaping CO₂) going through the valve. All under control and a good sign that the yeast is doing its work.
