Recently, instead of throwing out the skins from the pumpkin I processed, I dried them out in my dehydrator and then blitzed them into a powder. That, in turn, went into loaf of bread I made this weekend.
Did it make the bread more nutritious? It’s hard to say. It certainly doesn’t taste strongly of pumpkin. However, it does tastes delicious and has a more golden hue than a typical loaf so I’m counting that as success… and I’m going to be dehydrating and powdering the skins of the two pumpkins we got this weekend too in order to boost my stock of pumpkin powder.
