Time for another homebrew. This time I’m trying a recipe for Hydes Dark Mild – a new recipe for me (another Graham Wheeler one) and not a beer I remember trying but the description sounded good. My version won’t be that close even if the brewing turns out spot on as I didn’t have quite the right ingredients. Instead of chocolate malt, I’ve used a combination of black malt and biscuit malt. Who knows if it will bear an relation to the real thing… hence my chosen moniker, Dr Jekyll.

Of course, my one might turn out to be the wild side but it is doing okay so far. The original gravity was a few points higher (1.037 rather than 1.034) but it is now in the fermenter with some Safale S-04 to get it going.
