We don’t have enough fruit bushes in the garden to produce large batches in one go. Some of the harvest we use immediately and the rest we wash and freeze with the result that, as the harvest season draws towards its close, we have a draw of our freezer jam packed with tubs of various fruits. Time to start with methods of preserving that don’t require freezer space.

Last night I picked a handful of fresh blackberries and, supplemented from the freezer, boiled them with a cooking apple and some sugar. That gives three jars of blackberry and apple conserve in the larder. Now I need to decide what will be next on the list.
