Here are my Highland Burgundy Red potatoes in the pot last night:

Truth be told, the resulting colour was more between dusky pink and lilac but certainly not the regular colour. I used potatoes with fairly gnarly skins and probably should have peeled them but, a slight bitterness aside, it was otherwise a tasty result.
