The tea fudge idea worked out well. I think the high proportion of milk to sugar meant that it stayed soft although not runny. Essentially it was a tea infused version of dulce de leche (extra-thickened condensed milk).
I made something similar last night for a supper snack. This time I left the tea out but added a little vanilla essence. Rather than letting it set, I poured the hot sauce over ice-cream. It could not be classed as health food but, since the quantity was not too great, a very pleasant treat and really quite simple to make.
