The cooking technique I use for rice is as follows:
- Get a portion of rice, using a small bowl, and rinse it
- Put in a saucepan, add twice as much water (ie. two bowls worth), cover and rapidly bring to the boil
- Turn the heat down to a bare simmer and leave, covered, for ten minutes
- Turn off the heat and leave covered for another ten minutes
By the end of this, all the water is absorbed and the rice is perfectly cooked. However, a vital piece of equipment is a timer; get distracted and the chances are the result will be a sticky mess rather than excellent rice. I don’t have a timer on the oven in our Oxford flat so I did some searching and downloaded an excellent free program called Timer by Apimac.
Not only did this work very well as a timer but it also has other functions like a stopwatch. I think it will be a useful assistant for more than cooking rice: recommended.
